Catering a party yesterday, the client requested fruit salad for dessert. Eating fruit following a heavy meal is not optimal as far as digestion as fruits digest quickly and will putrefy the food previously eaten slowing down overall digestion, and possible causing gas – yikes! Anyhow, fruit salad is what was served, to counteract any discomfort crystalized ginger was served on the side, mint was added to the salad along with a few pinches of black pepper.
I so appreciate the balance of Ayurveda, and that we have so many tools to draw upon – in this case warming digestive herbs.
WINTER FRUIT SALAD RECIPE, Servings 12
I N G R E D I E N T S :
- 1 Pineapple, small dice
- 2 Mangos, small dice
- 3 Gala Apples, small dice
- 1 C Blueberries
- 1 handful fresh Mint, rough chop
- 1/2 Lemon, juiced
- 1 Lime zest and juice
- pinch Black Pepper
- 1 C Crystalized Ginger, finely chopped
- 1 1/2 C Pistachios, toasted and lightly salted
Combine and gently toss fruits and dressing, serve toppings on the side – Enjoy!
